A SUPER EASY TOMATO & WHITE BEAN SALAD RECIPE #vegetarian #summerday

This excessively simple tomato and white bean plate of mixed greens formula takes just 10 minutes to make, and is an incredible method to go through a late spring tomato overabundance. It is tasty as a principle supper serving of mixed greens with a portion of hard bread, or tucked into lunchboxes for a simple lunch.

The Princess has been peering into different lunchboxes at school, and has chosen everyone's lunch is much better than hers. To address this, she has deserted her standard sandwich for serving of mixed greens for lunch. Notwithstanding, those of you acquainted with The Princess realize that a straightforward lettuce and tomato serving of mixed greens won't cut it, and just a gourmet fundamental supper plate of mixed greens will do. So this week she is making the most of my tomato and white bean plate of mixed greens in her lunchbox.

This white bean serving of mixed greens is probably the least demanding plate of mixed greens I make. It regularly graces our supper table throughout the late spring months, either as a principle dinner or a side dish, and is an extraordinary method to go through the cherry tomatoes when they are coming thick and quick from the nursery. Furthermore, what I love the most about this serving of mixed greens formula is that it is anything but difficult to get ready ahead, and will sit joyfully in the refrigerator for a couple of days without losing flavor.

Ingredients
For the salad dressing

  • 60 ml (4 Tbsp) extra virgin olive oil
  • 40 ml (2 Tbsp + 1 tsp) lemon juice
  • Salt & pepper

For the salad

  • 150 g (1 cup) cherry tomatoes halved
  • 1 Tablespoon quick pickled onions
  • 2 Tablespoons chopped fresh parsley
  • 375 g (2 cups) cooked cannellini beans

Instructions
To make the salad dressing

  1. Place the lemon juice and olive oil in a small jar with a lid.
  2. Season well with salt and pepper.
  3. Shake well to combine the ingredients, then set aside.

To assemble the salad

  1. Place the tomatoes, parsley and pickled onions into a medium bowl.
  2. Stir thoroughly to combine.
  3. Add the beans to the bowl.
  4. Pour over the dressing.
  5. Gently toss everything together. Stir the salad gently as the beans will break up if you are too vigorous.
  6. Serve & enjoy!
